Have you noticed the difference in the yolk of an egg from a hen who has been allowed to forage on grass and bugs versus the yolk of an egg that was raised in a factory?
The color difference is due to the difference in what the hen is eating/fed. If they eat more yellow-orange carotenoids, or natural pigments, it affects and changes the yolk's color.
As for the nutritional value of the yolks, darker, more colorful yolks have the same amount of protein and fat than lighter yolks. Some studies have shown, however, that eggs from pasture raised hens can have more omega-3s and vitamins but less cholesterol due to healthier, more natural feed.
Despite the fact that there's no real proof that egg yolk color is related to flavor, some people still claim they find darker yolks more flavorful. Any noticeable difference in flavor, though, is probably due to the hen's diet.
We feed the hens a no soy, no corn, no gmo feed at Senter Ranch. There are many studies that show that the current use of soy in our diets and in animal feed mixes is causing hormonal issues in young girls and women, so we have opted to remove that from our diet. Additionally, the production of corn is predominantly with genetically modified seed, so we have opted to remove that from our diet and feed as well. The remaining ingredients in the feed are also free from genetic modification.
